Summary

The first recipe book for the home cook by Pierre Gagnaire, the innovative chef described by Ruth Reichl in The New York Times as The Wizard of Paris. One of Frances most creative chefs, Pierre Gagnaire is revered for pushing the boundaries of taste and texture. He runs a dozen restaurants around the world, including his eponymous three Michelin-starred temple of gastronomy in Paris, Sketch in London, and Twist at the Mandarin Oriental in Las Vegas. Now, for the first time, Gagnaires years of experience at the forefront of culinary innovation come together to provide a visually stunning culinary master class for the home cook. Organized into mealtime chapters, 175 recipes offer simple yet refined dishes. Breakfast includes French Toast and Lemon-Rhubarb Marmalade, washed down with a cup of Orange-Cardamom Coffee or a glass of Sparkling Melon-Strawberry juice. Try Shitaki-Gorgonzala Ciabatta or Zucchini Pesto for lunch and, for dinner, Lamb with Potatoes and Prunes or Grilled Line-Caught Bass. For those with a sweet tooth, Gagnaires desserts range from a classic Chocolate Tart to the inventive Raspberries with Parmesan, while Bell Pepper Cocktail or Pear with Roquefort and Walnuts on Endive Leaves provide the perfect cocktail party accompaniments. Gagnaires sense of humor shines through in recipes such as Andys Tomato Soup, a reference to the legendary artist, and his decadent Onion Soup, which calls for a full bottle of champagne. Throughout, Jacques Gavards photography brings into focus the raw elements of Gagnaires recipes, with beautiful images of primary ingredients. This book succeeds in bringing the creativity of a master chef into the home kitchen and will expand the repertoire of the budding cooknovice or accomplishedoffering a fresh perspective on home dining.
